Does anyone know what planet rules beets and beetroot as a food and vegetable (deep red root veggie - I don't know much about a beet's natural flavor)?

Well, Mercury rules eatable produce that is not fruit (aka veggies). The Sun rules plants that are firmly rooted in place.
Beets are shaped and colored like a heart and are consumed for heart health. For oxygen, circulation, endurance, and blood pressure, etc.. It can also boost circulation to the frontal lobes of the brain for better executive function in the elderly.
So as a plant, it is ruled by the Sun. As a food, it is ruled by Mercury. It's nutritional value has a lot of both Sun and Mars?
I guess that pretty much explains it, and that everything, in some way, ultimately contains the whole Solar System.
